We sang Supercalifragilisticexpialidocious today.
It was raining outside when I picked Chanelle up after school. We had a showing at the house and had an hour to kill. After a quick stop into the grocery store we made our way to Wendy’s because Chanelle thought it was a Frosty kind of day. For 30 minutes we sat in the dining room while Chanelle sucked down chocolaty goodness and Meadow squealed and played the Throw Everything On The Floor game. We returned home just in time to see the Realtor and prospective buyer unlock the door to go in (an hour later than I was told). I sent a quick prayer toward the Heaven’s and youwilllikeourhouse vibes toward our front door and made a bee line out of our neighborhood.
That’s where Supercalifragilisticexpialidocious came in. We parked in the parking lot of a school and Chanelle had a great idea. . .
Let’s sing Supercalifragilisticexpialidocious.
I’m not sure of the words, I told her.
Look on your phone, she told me.
Dang smart phones.
So we sang. And we sang. And we sang. Do you have any idea how long that song is? I was tripping over my tongue after the second verse. Major props go to Julie Andrews and those kids.
These are the things Mom’s do. . . mostly in the privacy of their homes (or cars). We sing and dance and play and make fools of ourselves just to pass the time. Now that the weather is changing we have to be a bit more creative in how we fill our days. We’ve found ourselves spending a lot of time in the kitchen. Usually Meadow is crawling around on the floor removing everything from the cupboards while Chanelle and I cook or bake or color or play games.
Chanelle and Meadow have recently formed their own band. They rock out while I cook
Anyway, back to the kitchen. . .
I’ve been meaning to share a recipe with you for some time. It is one of our family favorites and I promise if you try it. . . you will like it. The recipe is super easy and come from my Grandmother’s kitchen. That’s why we call it Mama’s Chicken.
1/3 c. fine dry bread crumbs (I use Italian)
1 T. minced Parsley
3 T. grated Parmesan Cheese
2 Large egg whites
2 tsp. water
1 lb. boneless/skinless chicken breasts
1 T. olive oil
1 lemon, quartered, lengthwise
Combine the bread crumbs and parsley on a plate. Place the cheese on another plate. In a small bowl, lightly beat the egg whites with the water.
Dip the chicken breasts into the cheese, then into the egg whites, then into the crumb mixture, coating both sides evenly. Lay them on a rack and refrigerate, uncovered, for 20 minutes.
Heat the olive oil in a heavy 10 in. skillet over moderately high heat for 1 min. Add the chicken and brown about 3 minutes on each side or until no longer pink when cut near the center.
Transfer the chicken to a warm platter, garnish with the lemon quarters, and serve.
Now that I’m thinking about it, I’m wondering if I’ve shared this recipe before. I can’t find it, but I just may have. Oh well, it’s worth a repeat.
My (picky) kids love it.
In other news. . . I wanted to share a few photos from a recent shoot. Last week, I was able to spend some time with this adorable little guy as he celebrated his first birthday.
Those baby blues are spectacular, aren’t they?
His Mama told me that he typically smiles all of the time. However, it seems the camera brought out his more serious, subdued side.
As I’ve said before, this journey with photography is just that. . . a journey. I’m learning every step of the way and making mistakes all of the time. But when I am able to hand over a moment like this. . .
. . . it makes it all worth it.
I’m headed to bed now and, no doubt, Supercalifragilisticexpialidocious will play in my head for at least an hour before I fall asleep.
Thank you, Chanelle.
You are a fantastic mom. That's all. 😉
The recipe looks delicious! I am going to try it. PS Now I'm singing supercalifragilisticexpialidocious too!
